  • 2 servings of white rice (refrigerate overnight for better)
  • 100 grams of anchovies (anchovies or anchovies)
  • 2 eggs, shake off
  • 2 cloves of garlic, finely chopped
  • 1 spring onion, thinly sliced
  • 1 large red chili, sliced ​​oblique (according to taste)
  • 2 tablespoons of sweet soy sauce
  • 1 tablespoon chili sauce (optional)
  • 1 tablespoon sesame oil (optional)
  • Right amount of oil
  • Salt to taste

How to make:

  1. Heat some cooking oil in a wok or frying pan. Fried anchovies until brown and dry. Lift and drain.
  2. Using the same pan, add a little more oil if needed. Saute garlic until fragrant.
  3. Add the beaten eggs to the skillet and stir well until the eggs are set and grainy.
  4. Put cold white rice into the pan, stir well with eggs and garlic. Make sure all the ingredients are well mixed.
  5. Add sweet soy sauce and chili sauce (if using), stir well.
  6. Enter the rice anchovies that have been fried before, stir again until all the ingredients are evenly mixed.
  7. Add salt to taste according to taste and mix well.
  8. Lastly, add sliced ​​green onions and red chilies. Stir briefly so that the leeks and chilies are evenly distributed in the fried rice.
  9. If you like, add a little sesame oil before removing the fried rice from the pan, stir well.
  10. Remove and serve anchovy fried rice in a serving plate. You can add cucumber slices, crackers, or pickles as a complement. Enjoy anchovy fried rice while it’s warm!
